Global animal protein runs an estimated $1.3-1.4T (2024) measured at processed-product value (Fortune Business Insights and other 2025 reports), with forecasts reaching roughly $2.5-2.8T by the mid-2030s (Precedence Research, 2025) — a wide range, because sources disagree on whether to measure farm-gate or retail value. The structure is the story: processing is tightly consolidated, the raising of livestock — cattle especially — is not, and that mismatch decides who keeps the margin. Feed cost is the most durable driver of profitability, and AI's clearest entry point is the labor cost of watching the herd.

Market structure

Volume growth is running low-single-digit globally, with the protein mix moving toward poultry — the cheapest feed-conversion ratio of the major proteins — and away from beef in mature markets. The US, Brazil, China and the EU dominate production; China and Southeast Asia are the fastest-growing consumption markets. Processing and packing is an oligopoly, led by JBS, Tyson, Cargill and WH Group's Smithfield subsidiary, while livestock raising itself stays fragmented among independent producers. Concentrated buyers facing fragmented sellers gives processors significant buying leverage over growers, and the leverage is structural, not cyclical.

The segment buys from feed and animal health suppliers and sells into processing and packing operations, which sit adjacent to branded food manufacturing rather than inside this segment proper. Feed runs roughly 60-70% of the total cost of raising an animal — the dominant variable cost — so grain-price movements are the single biggest swing factor in producer margin. Margins are consequently thin and cyclical, tracking the spread between livestock prices and grain prices. Regulatory and biosecurity exposure is heavy: an avian influenza or African swine fever outbreak can eliminate a producer's flock or herd with no warning.

How AI is reshaping this segment

Producers integrating into feed and animal health are defending their largest cost line against margin squeeze, not chasing new revenue. Integration into processing and packing is the opposite motion — a scale-seeking reach for margin that currently accrues to the packers. Alternative protein sits apart from both: the producers and processors funding it are buying insurance against a structural shift in protein demand, not a near-term profit center.

Inside production itself, AI's clearest effect is on monitoring labor. Computer-vision systems that watch barns and feedlots for early signs of illness, paired with AI-driven feed-optimization software, substitute for the manual observation skill experienced barn managers have historically supplied — catching a sick animal early, or fine-tuning a feed ration, used to depend on an experienced eye walking the pens. Software now replicates part of that expertise, and the wage premium skilled barn management once commanded compresses accordingly. Precision livestock monitoring is already deployed at scale operations. Among smaller operations, where the fixed cost of sensor infrastructure is harder to justify, broad adoption is more likely 5-10 years out.
